Grilled Veggies

  1. Combine all the vegetables in a large bowl.
  2. Add the olive oil, salt and pepper and toss to coat.
  3. Place the vegetables in a grilling basket.
  4. Grill for 20 to 30 minutes (turn after 10 minutes or so) or until the vegetables are cooked to the desired tenderness.
  5. Place on a serving platter.
  6. Sprinkle with cheese.
  7. Serve.
