Orange Zucchini Loaves
- 1 (18 ounce) box orange cake mix
- 3 egg whites
- 34 cup water
- 13 cup vegetable oil
- 1 cup grated zucchini
- 2 teaspoons orange zest
- 14 cup sugar
- 2 tablespoons orange juice
- Preheat oven to 350 degrees.
- Grease two loaf pans.
- Combine cake mix, egg whites, water, oil and cinnamon in a large bowl and mix together.
- Fold in zucchini and orange zest.
- Divide evenly among pans.
- Bake for 50 to 55 minutes.
- Cool loaves in pans for 15 minutes.
- Remove from pans and poke holes in tops of loaves with a fork.
- Combine sugar and orange juice in a small pan.
- Cook on medium heat stirring constantly until sugar dissolves.
- Spoon hot syrup over each loaf and cool completely.
