Relishes and Pickled Vegetables

  1. Heat the sugar and vinegar in a nonreactive stockpot over medium-high heat, stirring, until the sugar has dissolved.
  2. Add the remaining ingredients; bring to a boil.
  3. Reduce heat; cover, and simmer 30 minutes.
  4. Remove from heat; let stand overnight at room temperature.
  5. Transfer the mixture to jars or airtight containers; refrigerate up to 2 weeks.
