Haddock Quiche
- 1 each pie shell (9 inch) for quiche
- 300 grams haddock smoked
- 1 1/2 cups cream
- 1 each onions chopped
- 150 grams swiss cheese grated
- 1 tablespoon flour, all-purpose
- 4 large eggs
- 2 tablespoons butter
- 3 tablespoons scallions, spring or green onions finely chopped
- 1/2 cup mushrooms sliced
- 1 x salt and black pepper
- 1 x nutmeg
- Bake pie crust with weight inside for 15 minutes in a 350F (180C) pre-heated oven.
- Remove weight and bake another 10 minutes.
- Cook onion in butter until transparent.
- Add mushrooms and cook until dry.
- Add flaked haddock to mixture and turn off heat.
- Place filling on pie crust.
- Beat eggs with cream and season with spices.
- Stir flour into cheese and place on top of filling.
- Pour seasoned egg mixture with green onions on top.
- Bake for 30 to 45 minutes in 300 F oven.
