Barbecued Spicy Chicken
- 1 cup plain low-fat yogurt
- 2 garlic cloves, crushed
- 2 tablespoons green curry paste
- 2 tablespoons lime juice
- 600 g skinless chicken thighs or 600 g skinless chicken breasts, trimmed of fat
- 1 cup plain low-fat yogurt
- 12 cup chopped of fresh mint
- 12 cup chopped fresh coriander
- 1 tablespoon lime juice
- Combine the yogurt, garlic, curry paste and lime juice in a shallow bowl.
- Place the chicken into the mixture and turn the chicken to coat it with the yogurt mixture.
- Refrigerate for at least 30 minutes, preferably longer.
- Remove the chicken from the marinade and barbecue for 15-20 minutes, turning once and spooning any remaining marinade over them as they cook.
- For the sauce, combine the yogurt, mint, coriander and lime juice.
- Serve the chicken topped with a dollop of sauce.
- Steamed rice or flat bread and a green salad go well.
