Grandmom Piccone's Pizzelles
- 8 eggs
- 7 ounces melted Crisco
- 1 14 cups sugar
- 1 (1 ounce) bottle anise extract or 2 teaspoons anise oil
- 2 12 cups flour
- Beat eggs and sugar until light and foamy.
- Add melted shortening a little at a time.
- (make sure shortening is slightly cool, if it is too hot, it will cook the eggs!
- ).
- Add anise oil.
- Gradually add flour to make a very light dough.
- Drop onto pizzelle iron with a teaspoon to cook.
