Caramelitas
- 1/2 c. softened butter or margarine
- 1 c. sugar
- 1 egg
- 2 oz. melted chocolate
- 1/3 c. milk
- 2 c. flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 c. chopped pecans
- 18 vanilla caramels or candied cherries, cut in half
- 1 1/2 c. powdered sugar
- 2 Tbsp. light corn syrup
- 1 oz. melted chocolate
- 2 to 3 Tbsp. hot water
- Mix butter, sugar, egg, chocolate, milk and vanilla.
- Mix in remaining ingredients on low speed to soft dough, scraping bowl constantly.
- Halve the dough.
- Chill for 1 to 2 hours.
- Heat oven to 400u0b0.
- Mold dough by rounded teaspoonfuls around caramel halves; place on ungreased cookie sheet.
- Bake 7 minutes; cool. Blend remaining ingredients.
- Swirl cookies in chocolate glaze.
