Blue Plate Meatloaf
- 3/4 lb. ground pork
- 3/4 lb. ground beef
- 1 cup corn chips, finely crushed
- 1 cup green onion, thinly sliced
- 1 cup bottled chili sauce, divided
- 2 whole eggs, beaten
- 2-1/2 tsp. chili powder
- 1-1/2 tsp. salt
- 1 tsp. black pepper
- Combine beef, pork, corn chips, onion, 1/4 cup chili sauce, eggs, chili powder, salt and pepper.
- Mix to blend well.
- Place in baking dish.
- Spread remaining 3/4 cup chili sauce over the loaf.
- Bake in a 450F oven for 20 minutes.
