Stir-Fry Chicken
- 10 oz. skinned, boned chicken
- 1/4 c. soy sauce
- 1/2 tsp. garlic powder
- 1 Tbsp. plus 1 tsp. cornstarch
- 1 c. water
- 1 Tbsp. vegetable oil
- 1/2 c. broccoli flowerets
- 1/2 c. cauliflower flowerets
- 1/2 c. chopped onions
- 1/2 c. sliced carrots
- 1/2 c. sliced green pepper
- Combine chicken, soy sauce and garlic powder in a bowl; stir and set aside.
- Combine cornstarch and water; stir and set aside. Heat oil in a wok or large skillet over medium-high heat.
- Add broccoli and next 4 ingredients; stir-fry 3 to 5 minutes or until tender crisp.
- Remove vegetables from wok.
- Add chicken mixture and stir-fry 5 minutes, or until chicken is done.
- Return vegetables and stir in cornstarch mixture and cook, stirring constantly, until thickened.
