Coconut Vegetable Soup
- 1 large green coconut
- 1 tbsp oil
- 200 ml water
- 1 cup carrot
- 1/2 cup leek
- 1 cup napa cabbage
- 1 large deseeded red chili
- 200 ml coconut water
- 1 cup coconut flesh
- 1 dash salt
- 1 cup noodle
- in pan saute carrot , leek and napa cabbage for 1 minute then add water
- simmer for 5 minute then add coconut water simmer for another 3 minute add coconut flesh
- add sessoning simmer for 1 minute then off heat and serve as it is or pour it back into the coconut shell and serve
