Salmon Croquettes

  1. Flake fish and add eggs.
  2. Mix well.
  3. Add cracker crumbs, salt, and cayenne pepper.
  4. Mix well and form into balls the size of a tablespoon.
  5. Fry in a fry daddy or deep pot with oil at 375 degrees, until golden brown.
