Chicken, Spinach, Rice & Mini Meatball Soup Recipe
- 1 chicken
- 2 quarts. water
- Garlic pwdr
- Onion pwdr
- Salt
- Pepper
- 1 c. cooked rice
- 1 pound grnd beef
- 2 Large eggs
- 2 slices moist bread
- 1 pkg. frzn spinach, cooked & liquid removed
- In a large pot simmer the chicken in water flavored to taste with garlic pwdr, onion pwdr, salt and pepper.
- Simmer one hour.
- Remove bones from chicken.
- Mix beef, Large eggs and bread.
- Season to taste with spices.
- Make marble sized meatballs and drop into boiling chicken mix.
- Cook 10 min.
- Add in rice and spinach.
- Simmer 10 min.
