Banana Cranberry Muffins Recipe
- 1 1/2 c. Flour
- 1 tsp Baking Pwdr
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 tsp Cinnamon
- 1/8 tsp Cream Of Tartar
- 1/2 c. Sugar substitute (ie, Sugar Twin)
- 1 x Egg Beaters 99% egg substitute or possibly Second Nature
- 1 1/2 c. Mashed Bananas
- 1/3 c. Margarine (ie, Becel Light)
- 3/4 c. Cranberries fresh or possibly frzn
- Preheat oven to 375.
- Combine first 7 ingredients in large bowl.
- Beat egg, banana and melted margarine together well.
- Add in to dry ingredients, stirring just to moisten.
- Mix in cranberries.
- Spoon into 12 medium muffin c., lightly greased or possibly lined with paper baking c.. Bake for 20 25 min, or possibly till top springs back when lightly touched.
