Applesauce Fruitcake
- 2 c. brown sugar
- 1 c. shortening
- 3 eggs
- 1 tsp. salt
- 2 c. applesauce
- 1/2 tsp. baking soda
- 1 to 2 lb. candied fruit*
- 1 c. chopped nuts
- 2 1/2 c. flour
- 3 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. allspice
- 1/2 tsp. cloves
- Cream shortening, sugar and eggs.
- Stir soda into applesauce until foaming.
- Add to creamed mixture.
- Sift flour and spices; add to mixture.
- Fold in candied fruit and walnuts.
- Line loaf pans with brown paper, then wax paper.
- Pour fruitcake mixture into 2 (12 x 3 1/2-inch) pans.
- Bake in a 350u0b0 oven for about 1 1/4 to 1 1/2 hours or until toothpick comes out clean.
- Remove from pans and immediately peel off wax paper.
- Cool completely on racks.
- Put in foil wrapping and place in freezer several days (or longer).
- While still firm, slice as desired.
