Braised Mustard Greens

  1. On medium heat, saute garlic and bacon in a large saute pan.
  2. While bacon is cooking boil water in a large pot.
  3. Blanch mustard greens in boiling water until bright green.
  4. *Cook's Note: Add a few greens a little bit at a time into boiling water.
  5. Make room for more greens by pushing down with a spoon.
  6. Drain greens.
  7. In a saute pan with the bacon, add greens and garlic.
  8. Stir together.
  9. Add chicken stock and raisins.
  10. Mix well together.
  11. Add salt and pepper, for taste, and let simmer for 5 minutes.
