Baked Salmon In Foil
- 2 Tbsp. olive oil
- 1 (10 oz.) pkg. frozen chopped spinach, thawed
- 1 (8 oz) can stewed tomatoes
- 1 onion, chopped
- 1 clove minced garlic
- 4 salmon (1 in. thick)
- 4 pieces foil (each 12 in. sq.)
- 4 think lemon slices
- 1 Tbsp. coarsely chopped parsley
- salt
- pepper
- Preheat oven to 375u0b0.
- In medium saucepan, heat 1 tablespoon olive oil over medium heat until hot.
- Add spinach, tomatoes, onion, and garlic.
- Cook, stirring occasionally, 5 minutes or until mixture is thick and onion is tender.
- In medium skillet, heat 1 tablespoon olive oil until hot.
- Add salmon; cook 1 to 2 minutes until lightly browned.
- Place 1/4 of spinach mixture in center of each piece of foil; top with salmon steak.
- Drizzle liquid from skillet over salmon.
- Top each with lemon slice and parsley.
- Fold edges of each foil square together.
- Place on baking sheet.
- Bake 15 minutes.
- Season with salt and pepper.
