Cognac Chocolat Bouchee (Chocolate Bite)

  1. Preheat oven to 350F
  2. Butter and flour 9-inch square pan.
  3. Sift together cocoa, flour, salt and cinnamon.
  4. Melt butter, corn oil, and chocolate over a double boiler.
  5. Place melted chocolate mixture in a mixing bowl.
  6. Allow to cool for 5 minutes.
  7. Add brown sugar and beat well.
  8. Add eggs slowly.
  9. Add cognac.
  10. Slowly add dry ingredients, mixing until incorporated.
  11. Pour into prepared pan.
  12. Bake for 20-30 minutes.
  13. Let brownies cool and cut into desired shapes.
  14. Glaze:.
  15. Melt chocolate, corn oil and cognac over a double boiler.
  16. Place brownies on cake rack over pan to catch drippings.
  17. Pour warm glaze over to coat.
  18. Chill until glaze sets.
  19. Refrigerate any remaining glaze in a covered bowl.
