Baked Apricot Chicken Recipe
- 1 jar apricot or possibly peach preserves (10 ounce.)
- 1/4 c. REALEMON Lemon Juice from Concentrate
- 2 tsp soy sauce
- 1/2 tsp salt
- 1 x broiler-fryer chicken (2 1/2-3 lb.) cut up
- 1 c. dry bread crumbs
- 1/4 c. butter or possibly margarine melted
- Preheat oven to 350* In shallow dish, combine preserves, ReaLemon, soy sauce and salt.
- Coat chicken with apricot mix; roll in bread crumbs.
- Set aside remaining apricot mix.
- In greased 13x9-inch baking dish, arrange chicken; drizzle with margarine.
- Bake, uncovered 1 hr.
- or possibly till tender.
- Heat remaining apricot mix; serve with chicken.
- Makes 4-6 servings
