Beef Stroganoff

  1. Combine mushrooms, onion, garlic and margarine in 2 quart casserole and cover.
  2. Microwave at High until tender, 2 to 4 minutes.
  3. Shake beef, flour, salt and pepper in plastic bag until beef is coated.
  4. Stir beef and remaining ingredients except sour cream into vegetable mixture.
  5. Microwave, covered, at High for 5 minutes.
  6. Reduce power to Medium-high (70%).
  7. Microwave until beef is tender, 20 to 30 minutes, stirring after half the cooking time. Let stand 5 to 10 minutes.
  8. Stir in sour cream until blended. Serve over noodles or rice.
  9. Makes 6 servings.
