Beef Stroganoff
- 1 1/2 c. fresh sliced mushrooms
- 1 medium onion, chopped
- 1 clove garlic, minced
- 2 Tbsp. margarine
- 1 lb. boneless beef steak (1/2-inch thick)
- 3 Tbsp. all-purpose flour
- 1 c. hot water
- 1 Tbsp. sherry
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. catsup
- 2 tsp. instant beef boullion cubes
- 1/2 tsp. Worcestershire sauce
- 1 c. sour cream
- Combine mushrooms, onion, garlic and margarine in 2 quart casserole and cover.
- Microwave at High until tender, 2 to 4 minutes.
- Shake beef, flour, salt and pepper in plastic bag until beef is coated.
- Stir beef and remaining ingredients except sour cream into vegetable mixture.
- Microwave, covered, at High for 5 minutes.
- Reduce power to Medium-high (70%).
- Microwave until beef is tender, 20 to 30 minutes, stirring after half the cooking time. Let stand 5 to 10 minutes.
- Stir in sour cream until blended. Serve over noodles or rice.
- Makes 6 servings.
