Swiss Steak
- 1 1/2 lb. round steak
- 3 Tbsp. flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. chili powder
- 2 Tbsp. vegetable shortening
- 1 (16 oz.) can tomatoes
- 1 onion, sliced
- 1 stalk celery, sliced
- 1 green pepper, sliced
- 1 tsp. Worcestershire sauce
- Cut meat into serving sizes (about 6).
- Combine flour, salt, pepper and chili powder.
- Pound 2 tablespoons of mixture into meat. Heat shortening in a skillet; brown meat on both sides.
- Drain excess fat from skillet.
- Add undrained tomatoes, onion, celery, carrot, pepper and Worcestershire sauce.
- Cover and simmer for 1 hour or until tender.
- Remove meat; place on a platter.
- Skim excess fat off sauce.
- Combine 1/4 cup of water with remaining flour mixture and stir into sauce.
- Serve with rice or noodles.
