Green Chiles and Ham Breakfast Tacos Recipe
- Vegetable oil
- 1 medium poblano chile, seeded and cut into strips
- 3 slices ham, cut into strips
- 6 large eggs
- Kosher salt
- 6 corn tortillas
- Set a medium nonstick skillet over medium heat and add a little oil.
- Add the poblano strips and saute until they soften, about 10 minutes.
- Add the ham and saute with the chiles for 5 minutes; set aside.
- Grab a small nonstick skillet, add a bit more oil to the center, and break in 1 egg.
- Season with a little salt and fry until the white is set.
- Repeat with the remaining 5 eggs.
- Meanwhile, heat your tortillas (we do it directly over a gas flame till theyre puffed and a little blistered), and then evenly distribute the green chileham mixture among the tortillas.
- Top each taco with a fried egg and eat while hot!
