Oatmeal Raisin Muffins
- 1 1/4 c. rolled oats
- 1 1/4 c. buttermilk
- 2 large eggs, beaten lightly
- 3/4 c. firmly packed dark brown sugar
- 1 stick (1/2 c.) unsalted butter, melted and cooled
- 1 c. all-purpose flour
- 1 1/4 tsp. double-acting baking powder
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1/2 c. raisins
- In a large bowl, combine the oats and buttermilk.
- Let the mixture stand for 1 hour.
- Stir in the eggs, sugar and the butter. Sift the flour with the baking powder, salt and soda.
- Add the flour mixture
- to the egg mixture and stir the mixture until it is combined.
- (The batter will be lumpy.)
- Fold in the raisins. Spoon the batter into 12 well buttered and floured 1/3 cup muffin tins. Bake the muffins in a preheated oven at 400u0b0 for 15 to 20 minutes or until a cake tester inserted in the centers comes out clean.
- Makes 12 muffins.
