Curried Corn Soup
- 2 cups chicken broth
- 2 cups corn
- 1 12 cups chopped onions
- 1 jalapeno chili, finely chopped
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 12 teaspoon ground cumin
- 12 teaspoon cinnamon
- 1 cup milk
- 1 (14 ounce) can light coconut milk
- 2 tablespoons cornstarch
- salt and pepper
- cilantro (to garnish)
- Combine chicken broth, corn, onions, jalapeno, garlic and ginger in slow cooker; cover and cook on high for 3-4 hours, stirring in milk during the last 30 minutes.
- Turn heat to high and cook 10 minutes; add combined coconut milk and cornstarch, stirring 2-3 minutes.
- Season to taste with salt and pepper.
- Serve garnished with cilantro.
