Nana Joy's Risotto
- 2 12 lbs rice
- 12 lbs mincemeat
- 2 lbs onions
- 2 12 pints tomato puree
- 1 14 lbs peas
- 2 12 quarts stock
- 12 cup parsley
- 2 tablespoons salt
- 12 teaspoon pepper
- simmer mince and tomato puree for about 20mins.
- fry onions in hot fat until brown.
- add uncooked rice and brown lightly.
- add stock and seasonings bring to the boil.
- pour into baking dish and bake in hot oven for 15mins.
- add meat and peas and mix well.
rice, mincemeat, onions, tomato puree, peas, stock, parsley, salt, pepper
