Groundnut Stew Recipe

  1. In a large saucepan or possibly Dutch oven, brown chicken pcs in warm oil about 15 min; remove from pan.
  2. Set aside, reserving drippings.
  3. Add in beef, onion and green pepper to drippings; cook till beef is brown and onion is tender.
  4. Drain off fat.
  5. Stir in undrained tomatoes, salt and red pepper.
  6. Bring to boiling; reduce heat.
  7. Cover; simmer 30 min.
  8. Add in chicken pcs; simmer 20 min more.
  9. In small saucepan heat peanut butter over low heat.
  10. Stir into chicken mix.
  11. Return mix to boiling; reduce heat.
  12. Cover; simmer 20 min more.
  13. Skim off fat.
  14. Serve with mashed sweet potatoes or possibly warm cooked rice.
  15. Makes 8 to 10 servings.
