Groundnut Stew Recipe
- 1 (2 1/2 to 3 lb.) broiler-fryer chicken, cut up
- 3 tbsp. veg. oil
- 1 pound beef stew meat, cut into 1 inch pcs
- 2 med. onions, minced
- 1 med. green pepper, minced
- 1 (28 ounce.) can tomatoes, cut up
- 1 teaspoon salt
- 1 to 2 teaspoon grnd red pepper
- 3/4 c. peanut butter
- Mashed sweet potatoes or possibly warm cooked rice
- In a large saucepan or possibly Dutch oven, brown chicken pcs in warm oil about 15 min; remove from pan.
- Set aside, reserving drippings.
- Add in beef, onion and green pepper to drippings; cook till beef is brown and onion is tender.
- Drain off fat.
- Stir in undrained tomatoes, salt and red pepper.
- Bring to boiling; reduce heat.
- Cover; simmer 30 min.
- Add in chicken pcs; simmer 20 min more.
- In small saucepan heat peanut butter over low heat.
- Stir into chicken mix.
- Return mix to boiling; reduce heat.
- Cover; simmer 20 min more.
- Skim off fat.
- Serve with mashed sweet potatoes or possibly warm cooked rice.
- Makes 8 to 10 servings.
