Polenta with Cheese

  1. Heat oven to 350F (180C).
  2. Grease 1 1/2 quart casserole.
  3. Mix cornmeal and 3/4 cup cold water in 2-quart saucepan.
  4. Stir in 3 1/4 cups boiling water and the salt.
  5. Cook, stirring constantly, until mixture thickens and boils; reduce heat.
  6. Cover and simmer 10 minutes, stirring occasionally; remove from heat.
  7. Stir until smooth.
  8. Spread one-third of the mixture in casserole.
  9. Dot with 1 teaspoon of the margarine.
  10. Sprinkle with 13 cup Parmesan cheese.
  11. Repeat twice.
  12. Sprinkle with Swiss cheese.
  13. Bake uncovered 15 to 20 minutes or until hot and bubbly.
