Minestrone Recipe
- 2 (8 ounce.) cans tomato sauce
- 8 c. cool water
- 1 pkg. Knorr minestrone mix
- 1 bunch green onions, thinly sliced
- 1 teaspoon oregano
- 1 teaspoon dry basil
- 10 ounce. pkg. frzn minced spinach, cut into 4 chunks
- 1/2 c. minced fresh Italian parsley
- 1/2 c. uncooked small shells
- Place water in 4 qt Dutch oven, add in soup mix, tomato sauce, green onions, oregano, basil and frzn spinach.
- Bring to a boil and simmer 30 min, stir occasionally.
- Add in parsley and macaroni and simmer 30 additional min or possibly till pasta is tender.
- Make several hrs ahead of time so flavors can blend.
- Reheat and serve with fresh Italian bread.
