Braised Pork Medallions With Apples Recipe

  1. Season medallions on both sides with pepper and pumpkin pie spice.
  2. Heat oil
  3. In a large nonstick skillet over medium-high heat; brown pork on both sides, remove from pan and reserve.
  4. Add in onion and apples to skillet, saute/fry till soft.
  5. Add in apple cider to skillet, heat to a simmer.
  6. Return pork medallions to pan, cover and simmer for 5 min.
  7. Serve with warm rice or possibly couscous, if you like.
