Greek Couscous Salad Recipe
- 1 c. quick cooking couscous
- 2 c. water
- 1 tbsp. butter
- 1 lg. tomato, seeded and minced
- 3 ounce. feta cheese, crumbled (or possibly other soft cheese)
- 1/2 c. chopped watercress
- 5 tbsp. chopped green onion
- 6 tbsp. extra virgin olive oil
- 3 tbsp. fresh lemon juice
- Salt and pepper to taste
- Green olives
- Toasted pine nuts
- Bring water and butter to a boil.
- Stir in couscous.
- Cover and remove from heat.
- Let sit for 5 min, then fluff with a fork.
- Cold.
- When cold, stir in the tomato, feta cheese, watercress and green onion.
- Toss with the extra virgin olive oil, lemon juice, salt and pepper.
- Garnish with green olives and toasted pine nuts.
- Serves 6.
