Greek Couscous Salad Recipe

  1. Bring water and butter to a boil.
  2. Stir in couscous.
  3. Cover and remove from heat.
  4. Let sit for 5 min, then fluff with a fork.
  5. Cold.
  6. When cold, stir in the tomato, feta cheese, watercress and green onion.
  7. Toss with the extra virgin olive oil, lemon juice, salt and pepper.
  8. Garnish with green olives and toasted pine nuts.
  9. Serves 6.
