Brenda's Xmas Cake
- 1 cup butter
- 1 12 cups white sugar
- 3 cups flour
- 3 eggs
- 1 teaspoon salt
- 2 teaspoons baking powder
- 2 teaspoons vanilla
- 1 14 cups mixed peel
- 3 cups mixed candied fruit
- 1 lb white raisins
- 8 ounces red maraschino cherries
- 8 ounces green maraschino cherries
- 1 14 cups glace red cherries
- 1 14 cups glace green cherries
- 4 pineapple rings, yellow color (save for top of cake)
- 4 ounces walnut meats
- 4 ounces pecan halves
- Preheat oven to 250 Fahrenheit.
- Keep half of red cherries and pecans for top.
- Make the batter first and then put in the fruit.
- Add one half cup of warm water and mix.
- Add batter to angel food pan lined with buttered-both-sides parchment paper.
- Bake at 250 Fahrenheit for 4 hours.
