Cranberry-citrus Glazed Pork

  1. In a small bowl, combine salt, pepper, and 1/4 teaspoon sage; rub over all sides of pork roast.
  2. Place roast on a rack in a shallow roasting pan.
  3. Roast, uncovered, in a 325 degrees oven for 1 hour.
  4. For sauce, in a saucepan, combine cranberry sauce, orange peel, orange juice, and 1/4 teaspoon sage.
  5. Bring to boiling; reduce heat.
  6. Simmer, uncovered, about 10 minutes or until mixture has thickened slightly.
  7. Spoon about 1/4 cup sauce over pork.
  8. Roast meat, uncovered, 30 to 45 minutes more or until meat thermometer inserted in center of roast registers 155 degrees .
  9. Remove from oven.
  10. Cover loosely with foil; let stand 15 minutes.
  11. The temperature of the meat will rise 5 degrees during standing.
  12. Serve remaining sauce with meat.
