Coconut Pecan Squares
- 1/2 c. butter
- 1/2 c. brown sugar
- 1 c. plus 2 Tbsp. flour
- 2 eggs
- 1 c. light brown sugar
- 1 c. coarsely chopped pecans
- 1/2 c. coconut
- 1 tsp. vanilla flavoring
- pinch of salt
- confectioners sugar
- Cream the butter with the brown sugar.
- Add 1 c. flour and mix well.
- Press into greased 8 x 8 x 2 in. pan, spreading batter evenly into the corners.
- Bake in moderate oven at 350u0b0F for 20 min.
- Meanwhile, beat the eggs until frothy, gradually adding the light brown sugar, and beating until thick.
- Add pecans and coconut which have been tossed with the remaining flour.
- Flavor with vanilla and salt.
- Mix well.
- Spread over baked crust and bake for 20 min. more in moderate oven until well browned. Sprinkle with confectioners sugar when cool and cut into 1 in. squares.
