Baked Potato Soup (Guiltless)

  1. Bake potatoes until done.
  2. Chop 1-1/2 coarsely, mash or chop the other half potato finely.
  3. Melt 1 tbsp of butter in pan and saute the onion.
  4. Remove onion to soup pot and melt remaining butter, then add flour and simmer until light golden.
  5. Add 1/2 cup cold milk and whisk to blend until no lumps are present.
  6. Add mixture to onions in soup pot.
  7. Add potato and remainder of milk, along with evaporated milk.
  8. Add pepper and garlic powder and heat until it begins to thicken but does not boil.
  9. Add sour cream, cook until heated through.
  10. Serve with cheese and green onions as garnish.
