Baked Potato Soup (Guiltless)
- 2 baking potatoes
- 14 cup butter or 14 cup margarine
- 12 cup onion, chopped
- 14 cup flour
- 2 12 cups skim milk
- 1 (14 ounce) can fat-free evaporated milk
- 14 teaspoon pepper
- 12 teaspoon garlic powder
- salt
- 1 cup low-fat sour cream
- cheddar cheese
- green onion
- Bake potatoes until done.
- Chop 1-1/2 coarsely, mash or chop the other half potato finely.
- Melt 1 tbsp of butter in pan and saute the onion.
- Remove onion to soup pot and melt remaining butter, then add flour and simmer until light golden.
- Add 1/2 cup cold milk and whisk to blend until no lumps are present.
- Add mixture to onions in soup pot.
- Add potato and remainder of milk, along with evaporated milk.
- Add pepper and garlic powder and heat until it begins to thicken but does not boil.
- Add sour cream, cook until heated through.
- Serve with cheese and green onions as garnish.
