Coconut Bread

  1. Preheat oven to 325.
  2. For the bread, mix the dry ingredients together in a bowl.
  3. Mix the wet ingredients in a separate bowl.
  4. In place of buttermilk, you can mix 1 Tbsp vinegar with 1 cup milk and let it sit 5 minutes before using.
  5. Combine the wet and dry ingredients together.
  6. Pour into 1 loaf pan.
  7. Bake 40 minutes (I always increase the time 5-10 minutes).
  8. While the bread is baking, make the topping.
  9. Combine butter, water and sugar into a sauce pan.
  10. Boil to make a syrup (it didn't say how long, and since I've never made the topping, I don't know either!
  11. ).
  12. Add the flavoring at the end.
  13. When the bread is finished baking, make slits in the top.
  14. Drizzle syrup over the top to soak inches.
