Praline Peach Cobbler

  1. In a saucepan, mix 1 1/2 cups sugar, cornstarch, cinnamon and water.
  2. Stir until smooth.
  3. Add peaches. Cook and stir for 2 minutes more.
  4. Pour into a lightly greased 13 x 9 x 2-inch baking dish. Set aside.
  5. In a bowl, combine flour and remaining sugar. Cut in shortening until mixture resembles coarse crumbs.
  6. Add buttermilk and stir just until moistened.
  7. If needed, add additional buttermilk, one tablespoon at a time, until dough clings together. Turn onto a floured surface.
  8. Knead gently 6 to 8 times.
  9. Roll into a 12 x 8-inch rectangle. Combine butter, brown sugar and pecans. Spread over the dough to within 1/2-inch of the edges. Starting with long sides, roll up jelly roll fashion. Cut into 12 pieces 1-inch each.
  10. Place on top of the peach mixture. Bake at 400u0b0 for 25 to 30 minutes or until golden brown.
  11. Yields 12 servings.
