English Toffee(May Prepare Ahead. Makes One 10 X 13-Inch Slab.)
- 1/2 lb. butter
- 1 c. sugar
- 1 Tbsp. white corn syrup
- 3 Tbsp. water
- 1 1/2 c. nuts, chopped
- 6 oz. chocolate chips
- 1 (12 oz.) jar crunchy peanut butter
- 1 c. butter, softened
- 2 c. graham cracker crumbs
- 1 lb. powdered sugar
- 1 tsp. vanilla extract
- 1 c. chopped nuts (optional)
- 1 (4 oz.) bar paraffin
- 1 (12 oz.) pkg. semi-sweet chocolate chips
- Mix peanut butter, butter, cracker crumbs, sugar, vanilla and nuts; blend well.
- Hand roll into little finger-size logs.
- Melt paraffin and chocolate chips in top of double boiler.
- With fork, dip logs, one at a time, into chocolate mixture.
- Place on waxed paper to harden chocolate.
