Excellent! Eggplant and Bacon Cream Pasta
- 2 Eggplant (small Japanese type)
- 120 grams Bacon
- 1 stalk worth Broccoli stem
- 1 clove Garlic
- 300 ml Milk
- 1 1/2 tbsp White flour
- 1 dash Soup stock granules
- 1 dash Salt and pepper
- Dice the eggplant and soak in water.
- Dice the bacon as well.
- Dice the broccoli stem.
- Coat a pan with oil and stir fry the finely-chopped garlic.
- Add the broccoli stem.
- Add the eggplant and bacon and stir fry some more.
- For the cream sauce: Heat flour in another pan, add milk little by little and stir, so it doesn't become lumpy.
- Turn the heat on and add salt, pepper and soup stock granules.
- Simmer over low heat until thickened (adjust the taste here if necessary.)
- Add the stir fried ingredients, boiled pasta and the pasta water (2 tablespoons worth), mix together and it's done.
