Austrian Goulash Recipe
- 3 lb onions, sliced
- 1/2 c. shortening
- 2 Tbsp. paprika
- 1 x clove garlic
- 2 tsp caraway seeds
- 1 Tbsp. marjoram
- 1 Tbsp. salt
- 1 Tbsp. lemon juice
- 3 lb beef, cubed
- 1/2 c. cool water
- 1 Tbsp. flour
- 2 tsp tomato paste
- Saute/fry' onions in fat.
- Add in 1 Tbsp.
- paprika, and all the garlic, caraway, marjoram, salt, and lemon juice.
- Add in meat (don't brown).
- Simmer; covered for 2 hrs.
- Skim off fat.
- Blend in remaining paprika, flour, water and tomato paste.
- Simmer 15 min longer, allowing to come to a rolling boil.
