Rosh Hashanah Honey Cake(Pareve)
- 1 tsp. instant coffee crystals in 1 c. water (set aside)
- 3/4 c. oil
- 1/2 c. sugar
- 1/2 c. honey
- 3 eggs
- 1 tsp. vanilla
- 2 c. flour
- 1 Tbsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. ground cloves
- 1/2 c. chopped pecans/almonds (optional)
- Combine oil, sugar, honey, eggs and vanilla in large mixing bowl.
- Mix well (2 minutes on electric mixer).
- Set aside. Combine flour, baking powder, cinnamon, baking soda, salt and cloves.
- Set aside.
- Grease 10-inch Bundt pan and flour lightly. Add flour mixture to egg mixture alternately with coffee.
- Mix well (2 minutes).
- Add nuts.
- Fill Bundt or 4 to 5 very small loaf pans.
- Bake at 350u0b0 for 40 minutes.
- Cool 10 minutes and remove from pan.
- Dust with powdered sugar.
