Smoked whitefish risotto
- 2 tsp. oil
- 1 to 2 onions
- 1 tsp. curry
- 1 cup rice, uncooked
- 2 cups Homemade Salmon Broth
- 1/2 lb. smoked whitefish, chopped
- 2 tbsp. fresh parsley
- dill
- 1 hard-boiled egg, sliced
- Saute onion in oil about 2 minutes.
- Add curry and mix well.
- Add rice and broth and heat up until it boils.
- Reduce heat and cook covered about 20 minutes until the liquid is absorbed and the rice is done.
- Add fish, parsley or dill and heat up if needed.
- Garnish with egg slices before serving.
