Cornish Game Hens With Honey
- 12 cup olive oil
- 14 cup red wine vinegar (I use regular wine when vinegar is not available)
- 14 cup sherry wine
- 12 cup honey
- 1 tablespoon cumin, ground
- 34 teaspoon cinnamon, ground
- 1 12 teaspoons anise seed (I like to grind it)
- 8 Cornish hens
- salt and pepper
- Combine oil, vinegar, sherry, honey, cumin, anise and cinnamon in a small heavy saucepan.
- Simmer until mixture thickens slightly, stirring constantly (about 3 minutes).
- Salt and pepper hens generously and bursh them with glaze.
- Roast in 400 F oven until thigh juices run clearn when pierced (about 45-50 minutes).
- Be sure to baste hens with glaze every 10 minutes.
