Risotto with Mushrooms and Maltese Sausage
- 50 grams butter
- 2 tbsp olive oil
- 2 onion, chopped very thin
- 300 grams mushrooms, sliced
- 300 grams Maltese Sausage, sliced into small pieces (any other spiced sausage will do)
- 1 cup white wine
- 300 grams barley
- 800 ml Beef Broth
- 100 grams grated parmesan cheese
- In a large pot heat up the oil and the butter; until the butter melts
- Add in the onion and cook on medium heat until the onion is lightly brown
- Add the wine, stir it and ciok for a minute
- Add the sausage, stir well and cook for another 2 minutes
- Then add the mushrooms and tge barley mix it well and cook for a minute
- Pour in the broth and mix well.
- Cook the barley until all the water is evaporated.
- Stir occasionally to prevent sticking.
- When the liquid evaporates remove from the stove put in the cheese mix well and serve
