Cookie Mousse Sandwich

  1. Prepare mousse mix as directed on package.
  2. Pipe 1/2 cup of the mousse mixture onto each of 32 cookies, using pastry bag.
  3. Cover each with second cookie to make sandwich.
  4. Freeze at least 4 hours or overnight or until firm.
  5. Coat edge with miniature chocolate chips, chopped nuts or colored sprinkles.
  6. Serve frozen or place in refrigerator to thaw slightly before serving.
