Baked Peaches With Amaretti Cookies Recipe

• 7 x Peaches
• 10 whl Amaretti cookies
• 1/3 c. Granulated white sugar
• 1 x Egg yolk

2. Heat oven to 350 degrees.
3. Halve and pit 6 peaches-, place peach halves, cut side up, in a buttered baking dish just large sufficient to hold them comfortably-, set aside.

5. Grind cookies in a food processor-, transfer crumbs to a small bowl.

7. Peel and pit another peach-, process to a smooth puree.
8. Transfer puree to a medium bowl-, fold in sugar, egg yolk, and cookie crumbs.
9. Spoon a portion of filling into each peach half.

11. Bake till peaches are tender, about 1 hour.
12. Serve hot with sweetened whipped cream, flavored with a bit of Amaretto liqueur if desired.
