Spinach and Sprout Sandwich

  1. Toast bread, if desired.
  2. Wash baby spinach and squeeze out excess moisture.
  3. Place spinach in bowl and microwave for 30 to 60 seconds, until just slightly wilted.
  4. If you prefer, you can steam the spinach.
  5. To assemble sandwich, place spinach, then sprouts and then tomato, then top slice of bread.
  6. This makes the sprouts stay in place better.
  7. Enjoy!
