Adrian's stuffed chicken
- 6 each chicken breast
- 1 cup cream cheese
- 1 packages shredded cheese
- 1 1/4 tbsp lemon pepper
- 2 cup corn flakes
- 1 tbsp salt
- 1 tbsp pepper
- 1 tbsp montreal chicken spice
- 1/2 each green/red/yellow/orange pepper
- 1 cup spinach leaves
- preheat oven to 350
- grind cornflakes
- add all dry spices to ground flakes, and mix
- slice chicken breast so that two wings are present
- pound chicken to flatten a bit
- spoon out 1tablespoon of cream cheese and spread onto centre of chicken breast
- sprinkle shredded cheese on top of cream cheese
- add diced peppers or ground spinach on top of cheese
- fold ends of chicken, then roll chicken so insides are not visible
- place chicken in dry mixture and coat entire breast
- place chicken onto aluminum foiled baking sheet
- place in oven for 20-30 minutes
- plate with choice of side dishes
