Smoky Garlic Soup with Bacon

  1. Cook and stir bacon in large saucepan on medium heat until crisp.
  2. Remove bacon from pan with slotted spoon, reserving 1 Tbsp.
  3. drippings in pan.
  4. Drain bacon on paper towels.
  5. Add onions, garlic, paprika and bay leaf to drippings in pan; cook and stir 10 min.
  6. or until onions are tender.
  7. Add broth and potatoes; stir.
  8. Bring to boil; simmer on medium-low heat 10 min.
  9. or until potatoes are tender.
  10. Discard bay leaf.
  11. Blend soup, in batches, in blender or food processor until smooth.
  12. Return soup to saucepan; stir in bacon.
  13. Serve topped with green onions.
