Smoky Garlic Soup with Bacon
- 6 slices OSCAR MAYER Selects Smoked Uncured Bacon, cut into 1/2-inch pieces
- 3/4 cup coarsely chopped yellow onions King Sooper's 1 lb For $0.99 thru 02/09
- 1 head garlic, separated into cloves, peeled
- 1/2 tsp. smoked paprika
- 1 bay leaf
- 2 cans (14-1/2 oz. each) fat-free reduced-sodium chicken broth
- 1 baking potato (6 oz.), peeled, chopped
- 1 green onion, thinly sliced
- Cook and stir bacon in large saucepan on medium heat until crisp.
- Remove bacon from pan with slotted spoon, reserving 1 Tbsp.
- drippings in pan.
- Drain bacon on paper towels.
- Add onions, garlic, paprika and bay leaf to drippings in pan; cook and stir 10 min.
- or until onions are tender.
- Add broth and potatoes; stir.
- Bring to boil; simmer on medium-low heat 10 min.
- or until potatoes are tender.
- Discard bay leaf.
- Blend soup, in batches, in blender or food processor until smooth.
- Return soup to saucepan; stir in bacon.
- Serve topped with green onions.
