Sausage Stuffed Banana Peppers
- 8 Banana Peppers (Depending on size)
- 1 lb Ground Hot or Sweet Italian Sausage
- 1 cup Ritz Crackers, Crushed
- 1/2 cup Grated Parmesan Cheese
- 1 tbsp Garlic, Minced
- 1/8 tsp Black Pepper
- 2 tbsp Butter, melted
- 1/2 cup Extra-Virgin Olive Oil
- 1 Tomato Sauce (Your Choice)
- 1 Garlic Powder (To Finish)
- Wash your peppers and slice a slit from the top of the pepper to the bottom.
- Don't cut of the top or bottom of pepper!
- Remove the seeds.
- Brown sausage with galic and black pepper.
- Crush crackers into fine crumbs.
- I use a large freezer bag and a rolling pin.
- Add Parmesan cheese and mix well.
- When sausage is cooked, drain and mix with cracker mixture.
- Add melted butter until JUST MOIST!
- Preheat oven to 375F.
- Pour olive oil, coating evenly, the bottom of your baking dish.
- Stuff the peppers and place them in your baking dish.
- Drizzle with a little more olive oil and a sprinkle of garlic powder.
- Bake for approximately 30 minutes or until peppers are nice and tender.
- Spoon heated tomato sauce over peppers and top with Parmesan cheese.
- Enjoy!
- Serve with your favorite pasta or as a delicious appetizer.
