Apple-Pecan Salad with Honey Vinaigrette

• 7 cups spring mix lettuce
• 1 medium apple, sliced
• 1/3 cup pecan halves, toasted
• 1/4 cup apple cider vinegar
• 4 Tbsp. honey
• 2 Tbsp. olive oil
• 1/2 tsp. mustard
• 1/8 tsp. salt
• 1/8 tsp. pepper
• 1 cup shredded Parmesan cheese

1. In a serving bowl, combine the lettuce, apple and pecans.
2. In a small bowl, whisk the vinegar, honey, oil, mustard, salt and pepper.
3. Pour over salad; toss to coat.
4. Sprinkle with cheese.
