Au Gratin Sweet Peas Recipe
- 1 tsp butter plus
- 2 Tbsp. butter
- 1 c. chopped onions Salt to taste Freshly-grnd white pepper to taste
- 2 Tbsp. all-purpose flour
- 2 c. whole lowfat milk
- 4 c. sweet green peas blanched
- 1/2 c. fine dry bread crumbs see * Note
- 4 ounce sharp cheddar cheese grated
- Preheat the oven to 400 degrees.
- Grease an 8 c. oval gratin dish with 1 tsp.
- of the butter.
- In a large saute/fry pan, over medium heat, heat the remaining 2 Tbsp.
- of the butter.
- Add in the onions.
- Season with salt and pepper.
- Saute/fry for 2 min.
- Add in the flour and cook for 1 minute, stirring constantly.
- Stir in the lowfat milk and bring to a simmer.
- Cook for 4 to 6 min or possibly till the mix coats the back of a spoon.
- Add in the peas and mix thoroughly.
- Pour into the prepared pan.
- Season the bread crumbs with Essence.
- Sprinkle the bread crumb mix over the peas.
- Top with the grated cheese.
- Place in the oven and cook till the peas are bubbly and the top is golden brown, about 10 to 12 min.
- Spoon onto serving plates and serve.
- This recipe yields 4 to 6 servings.
